Howdy strangers! Sorry for the drag between posts…summertime is busy time but things have finally settled and I’m back to normal-ish. So, you know I try really hard not to use anyone’s name on here, you know, to protect the innocent!  This means I sometimes have to get creative. I have three sisters in law. Today, I’m going to tell you about the tall one. Tall SIL is the best! She’s beautiful, has great hair, is great with kids and honestly, might be the nicest person I’ve ever met. Sorry other SILs, I love each of you in your own special way but you’ve all met her and you know I’m right. Did I mention she’s crazy tall? TALL! She totally rocks the tall! Anyway, Tall SIL sent me a recipe recently and said she loved it so much, she made it twice. Well, how do you ignore a statement like that? You don’t, you get off your rear, go to the store, gather the goods and make it for yourself! The recipe is from Ree Drummond, The Pioneer Woman so you know it’s going to be good. Of course I’m never one to leave well enough alone so I made a few changes. I also decided to call it The Tall Everything Bagel in honor of Tall SIL. This sandwich is so big, I swear to you, it made my jaw click a little when I tried to bite into it! It’s so delicious and really, you can pile it full of whatever floats your boat! Tall Everything Bagel

Ingredients

  • 1 Everything bagel
  • Garden Veggie cream cheese
  • 1 slice muenster cheese
  • 1 slice provolone cheese
  • 3 thin slices deli turkey
  • cucumbers, sliced thin
  • red bell peppers, sliced thin
  • red onion, sliced thin
  • avocado, sliced
  • lime, juiced

Instructions

  1. Slice your Everything bagel in half
  2. smear veggie cream cheese on both sides
  3. layer one side with muenster cheese and the other side with provolone
  4. pile on your deli turkey
  5. stack on your thinly sliced veggies
  6. peel and slice your avocado, squeeze lime for added flavor and to slow browning process and add them in the middle
  7. smush it together as best you can, open wide and enjoy!

Notes

of course you can add or delete any veggies you like. you could also toast the bagel with the cheeses and deli meat before adding the veggies, that would be delish, too!
