This summer, I discovered an awesome food blogger, or, as I like to call them, a food blogger couple of awesomeness. They are Two Peas & Their Pod – if you don’t follow them, you totally should. Seriously, click on their link and sign up for their emails – you can thank me later! Not only are their recipes delicious, they are quite masterful with their pictures and food stylings. Really, I bow down to these two talents…simply amazing! Not too long ago, I made their recipe for Strawberry Nutella Muffins. Do I need to wait a second while you wipe the drool from your chin? Yes, you read that right…STRAWBERRIES and NUTELLA in compact little muffin form – perfection in the palm of your hand.

I let them cool a bit, mere seconds really because I couldn’t wait, the smell of these delicious love pockets was driving me insane!

The only change to the recipe I made was buttermilk. Sadly, I didn’t have any on hand so I made my own. If you are unfamiliar with the process, it’s really rather simple. Since I have a teenaged boy living under my roof, I alway have a gallon or three of milk at my house, and since I love lemons I almost always have one or two in the fruit keeper in my fridge. What I don’t often have on hand is buttermilk because, well, I’m not drinking it and I don’t know of a single person in my house who will drink it! Don’t get me wrong, when I remember to buy it, I use it – it’s great in pancakes, muffins, cornbread, egg replacement when dredging foods in flour or breadcrumbs, you name it. When I catch myself in a bind and a recipe calls for it, I simply take the prescribed amount in the recipe (1/3 cup for these muffins), sub the skim milk I always have on hand and squeeze a little more than half of a whole lemon directly into the regular skim milk. Let it sit for a few minutes, while you pull the rest of the ingredients together. You’ll soon notice this concoction makes a gross, curdled milk sensation in your cup…presto change-o – pseudo buttermilk!
